My name is Saraswati Shrestha. I am a nursing student in America. Far from home, far from the mountains. But every single day, no matter how exhausted I am after a long lecture, I come home and I make the same meal my mother made, and her mother before her. Today, my team and I are going to show you why this plate — lentils and rice — is the heartbeat of an entire nation. Daal Bhat is not a recipe. It is a civilization on a plate. For centuries, across every mountain pass and river valley of Nepal — across 131 different ethnic groups, speaking over 120 languages — one meal has remained constant. Rice for energy. Lentils for strength. And the tarkari — the vegetables — for the soul. The Terai farmers eat it. The Sherpa mountaineers eat it. The students, the nurses, the grandmothers — all of us, twice a day, every day. This is not food. This is identity. You might notice what I am wearing. This is a kurta — a traditional Nepali garment. My mother chose this fabric herself, back in Kathmandu. I cannot film with her because she is in Nepal and I am here. So I wear this every time I cook. Because when I put it on, I remember her. I remember her kitchen, her hands, her voice telling me how much turmeric to add. The clothes, the food, the smell — they are all the same memory. She is not in this kitchen, but in every way that matters, she is here.
